In order to ensure that each Piatti location is a unique experience, suited to its surrounding, Piatti managers and chefs are encouraged to personalize their spaces and menus to meet the needs and desires of their customers and staff. Paragon Restaurant & Bar
Paragon is an American brasserie inspired by the ubiquitous casual restaurants that serve as welcoming neighborhood social hubs all over France. Paragons capture the brasserie feel and spirit while providing stylish custom décor, a distinctly contemporary menu of new and reinterpreted American classics, an animated bar atmosphere and friendly service.

Mosaic Concepts is a collection of innovative non-branded ventures. Each of these one-of-a-kind destinations is created through our collaboration with a broad range of talented individuals from diverse disciplines. The creative energy of our partners combined with our extensive hospitality experience and broad resources ensures the success of each Mosaic Concepts' hotel, restaurant and spa.
Mosaic's goal is to create organically derived experiences influenced by existing spaces, local environments and unique business opportunities. Mosaic's diverse flagship properties include the tropical Plantation Gardens Restaurant & Bar on the Hawaiian island of Kauai, the charming El Dorado Hotel and El Dorado Kitchen in Northern California's wine country, the acclaimed restaurant Redd in the Napa Valley town of Yountville, and Bay 13, a modern seafood restaurant in Portland, Oregon.
